My job is the room: who is in it, what it sounds like at midnight, and whether people want to come back on a Tuesday. Groot Hospitality grew from one club into restaurants and hotels across Miami, and the thing that carried over was hospitality detail, the greeting and the table and the timing. I host guests at my venues and talk shop with operators trying to build something with staying power.
